Bailiwick seeks vineyards where climate and geology conspire to produce optimal growing conditions, where skilled growers can produce limited quantities of superb fruit. Bailiwick vineyards fall in two categories: Single Vineyard Designate (SVD) and Cuvée. 

As the name implies, wines produced from SVD vineyards use grapes exclusively from that particular vineyard as the combination of varietal, clone, climate and geology yields a wine with distinct personality. Cuvée vineyards grapes are fermented in separate lots, and then carefully blended with other Cuvée lots to achieve well balanced, full spectrum wines representative of an AVA.
